We were in Palmyra, this is the Hill Cumorrah like a month before pagent you can see the stage in the background that they were setting up. Any way arent we 2 cute girls!?!

chocolate cupcakes with avocado and cauliflower!!!!
I was givin this book called deceptively delicious by jessica seinfeld Its how to get your kids eating good food. here is one recipe that I am going to try but it sounded good and I am bored so I am posting it!!
Chocolate Cupcakes
Batter
non stick cooking spray
1 c avocado puree (puree recipe at bottom)
1 1/2 c sugar
1 c nonfat milk (skim)
2 tsp pure vanilla
1/2 tsp balsamic vinegar
2 lrg egg whites
2 c all purpose flour
1/2 c unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
Frosting
1(8-ounce) package reduced fat cream cheese
1/2 c confectioners' sugar
1/4 cup cauliflower puree (puree recipe at bottom)
2 tab pure vanilla
1/8 tsp salt
1- preheat oven to 350'F Coat a 12 cup muffin tin with cooking spray or line with paper baking cups
2- In a large mixing bowl or the bowl of an electric mixer, beat the avocado puree, sugar, milk, vanilla, and vinegar until smooth. Beat in the egg whites one at a time, just untill incorporated.
3- add the flour, cocoa powder, baking soda, and salt, and mix untill smooth. Divide the batter among the muffin cups. bake until the tops are lightly browned and spring back to the touch, 15-20 min. Turn out onto rack and cool completely before frosting them.
4- For the frosting, beat together the cream cheese, sugar, cauliflower puree, vanilla, and salt until smooth. Spread over the cooled cupcakes.
5-Store in an airtigt container at room temp. for up to 2 days, and freeze up to 1 month. ( the taste of avocado is still detectable when the cupcakes are warm so be sure to cool them completely)
Avocado puree - Prep- cut in half lengthwise, whack the blade of a chef's knife into the seed, twist to remove. Scoop the flesh out of the peel.
Puree- mash well in a bowl with a fork unti very smooth, then puree in a food processor or blender for about 2 min. when storing, squeeze air out of bag before sealing.
cauliflower puree - Prep- cut off florets and discard core.
Cook- Steam for 8-10 min.
Puree- in a food processor or blender for about 2 min, with a few tsp of water if needed for a smooth, creamy texture.
